BUTTKR, AX I) CIIELSG. > AT THE DOMINION SHOW. A MAn.ViFICFMT DISPLAY. The magnificent display of butter ami cheese at the Dominion Show at Hawera cannot but fail to impress the casual | visitor and even the farmer with the important place that buf.terfat lias taken in the development of Taranaki, :ind indeed of the whole of Mew Zealand, for factories from both islands are competing strongly in both butter aii'l cheese. Tn the seven cheese classes there are no less than 00 entries, whilst in the four butter classes 50 entries are staged. In cheese, as is only to be expected from the attention that has been paid to thai branch of the industry, Taranaki is strongly represented: still there are quite a number of factories that one would expect to see among the competitors. The principal prizes are divided between Taranaki and Wairarapa, Cardiff and Mangatoki being the local prize winners, whilst Dalefield and Park vale score lor Wairarapa. Cardiff wins four first prizes ami two special prizes. Dalefield wins two first prizes and also secures a leg in in the fly. Lano and Co. -Challenge Cup and the Shaw, Savill, and Albion Cup. In butter Taranaki is not so stronglv represented, only five factories for this district competing. In the open classes Taranaki does not secure a prize, the honors going to the Manawatu district. The dairy produce is admirably staged in the Dairy Hull, the golden cheese being surmounted by pot plants intermingled with the cups and trophies that arc being competed for, making a display that compels attention and admiration. The judges state that the entries for cheese are much larger than ill previous years and that competition is very keen. In some classes only half a point separates the three first exhibits. The winning exhibits are especially good, though a few of the cheeses exhibited lack a little in body. The managers are to be complemented on .the splendid got up and finish, all the cheese opening up very clean. In the 'butter classes, the judges expressed themselves as very pleased with the quality of the butter'exhibited. It was exceedingly gootl rlylll through, being practically perfect in every respect, except in the flavor. Competition in I each class was very keen. Levin Avon I first honors in three sections, Awahuri, j which has competed with considerable I success at all shows this winter, filling j the position of runner-up in each ease. | ,Jn the section for Taranaki factories I only, Omata Dairy Factory (C. Jensen, j who has also been prominent at other j shows this year) is successful, and se- I cures the Farmers' Co-operative Society's i .€lO TUs cup. which has to he won out- I right. It is to lie regretted that entries j for Taranaki factories are not more numerous, only five butter factories from i

the erstwhile hi'.tter province staging ex- : hibits. A suggestion lias been made by tiie judges tliat a class should be in- - eluded for freshly made butter in pats; j that is. butter made, say, witfiin a week j of tiie show, similar to the butter sold I for local consumption. Numerous factories make lmtter right throughout tiie winter; indeed, quite a number of cheese factories turn to butter at this time, and such a class should undoubtedly receive support from factory managers. It would, moreover, nffonl an opportunity of judging of the quality and flavor of butter, when hand feeding is indulged in to a large extent, a3 is . the case in the winter. Necessary pats | and labels could lie provided hy the. Show Committee, as is done hy Waikato in another class. The suggestion is one that should commend itself to show committees.
