One of the most interesting exhibits at the National Dairy Show at Palmersi on North is undoubtedly the butter and cheese display in the dairy produce hall. Here is attractively staged dairy produce from all parts of the North Island, and also from the South Island. Cheese predominates, there being PIS entries as agains.t 124 entries in the butter classes. Home separator factories compete freely in the butter classes, and there is a separate competition for gathered cream, proving that home separation has been recognised as having come to stay. Taranak'i, having gone in so much for cheese production, is not very largely represented in the butter section, but in the cheese section the erstwhile champion butter province has competed freely, and litore than holds its own in the prize list. The oilicers of the dairy division of the Agricultural Department, who judged the exhibits, spoke highly of the entries. Competition in all classes was keen, as may be judged from the points below. The quality all round was quite up to the standard of previous New Zca-. land shows. Owing to the uniformity of the butter, the judges had no criticism to make. Referring to the cheese, they considered that its quality was very praiseworthy, and was all round an improvement on the previous year. A noticeable feature was the closeness of body, which is indispensable in cheese for export to the British market. Last year the openness was very noticeable, hut the factory managers appear to luivc overcome this difficulty. The cheese was well staged, and showed an excellent finish. Altogether, the dairy produce section was a credit to the show. Mr. Cuddie, Dairy Commissioner, spoke highly of the assistance the A. and P. shows of the dominion had given in connection with dairying. Detailed results arc:— FACTORY BUTTER. Class 1. Best one box export butter, suitable for export. Gold medal to maker.
