The exhibit of butter and cheese at the Winter Show benches in a prominent place in the main hall is, as wae only to be expected in a district so largely devoted to dairying, a magnificent one, and attracted a considerable amount of attention. Both in butter and cheese the entry is a record one, and the stewards had considerable difficulty in arranging it to the best advantage in the space at their disposal. They have, however, succeeded admiralbly in their task, and the display, attractively arranged and surmounted by the 'beautiful challenge cups and other trophies, cannot fail to impress the spectator with the importance of the dairying industry. Tile butter competitions have drawn entries from all parts of the North laland and also from the South Island. There are sixty-six entries in the six butter classes this year, as against 60 in the five classes last year. The excision of the butter classes at the autumn show has created an additional class for the winter show. Though the entry in the butter classes must be regarded as satisfactory, some North Tarnnaki factories that were competitors last year are absent from the benches. A noticeable feature of the butter classes is. that all the first prizes, and indeed the majority of t the "places," go to outside factories. Awahuri, a factory in the Wellington province, takes no fewer than four first prizes, including the Taranaki A. and P. Society's champion cup, the Dairy Factory Managers' Association's trophy, the noriee class and the non-prize-winners' class. This factory comes out with an even grade of 95 points in each class. It has not competed here previously, but comes with a high reputation (which it has well sustained), as it was highest in tlie season's grade averages at Wellington, and has been a »prizc-\vinner at diows this season. Wangaehu secures Messrs Lovell and Christmas' 76-guinea cup for this year, whilst Te Aroha 'will hold for the first year the cup, valued at 50 guineas, presented by Messrs J. Nathan and Co. This factory also wins the trophies for the highest points and the average points. Of last year's' prize-winners Omata and Moa were 1 most successful, securing second place. The cheese-classes, though numerically stronger than previously, being 27 as against 92 last year, still fall short of what one -would expect from a district in which so much attention -has been deI voted to cheese production during the past few years, and which is each year I turning more and more to cheese. Only three North Taranaki factories arc represented, riz., Cape Egmont, Warea and Tariki, and the latter, •which was a large prize-winner a couple of years ago, eompoted only in one class. It is to be hoped that North Taranaki factory managers will bestir themselves in future and compete. Cardiff proved most successful, winning in the three classes in which it competed, and thus securing for one year the Shaw, Savill and Albion Co.'s cup and the Union Steamship Co.'s trophy. Kaupokonui, Taieri and Peninsula and Tariki were also prize-winners. I The dairy produce section was judged by the dairy staff, Messrs J. Johnston, J. Pederson and F. Thomson taking the batter, and Messrs W. Orant, C. Stevenson and E. C. Wood the cheese. fit conversation with a News reporter, Mr. Johnston again referred to the fact that the butter selected from the export glass, which was the cvery-'day work of the factory and was selected at the grading works by the secretary of the show, did not show up as well as that made by the factory managers from best selected raw material for competition in thg other classes. Both were opened up under the same conditions, having been held in the works for two months, ofiual to tho time taken to place on the London market. This, be said, was a striking example of the benefit that would result if a system of grading the milk were adopted. Mr. Johnston was well satisfied at the way most of the butter opened up, and considered that it was creditable indeed to the factory managers to secure 94 and 35 points after the lengthy period of storage. The butter in many classes was a particularly even lot, and competition was keen, aa may be judged from the fact that it was necessary to bracket as many as four together for second place in one instance.
