DEFROSTING BEEF AND MUTTON

A NEW SYSTEM. A report by one of the staff of the New South Wales Agent-General in London who attended a demonstration by the Macmeikan Defrosting Process Co., Ltd., at Plymouth, on November 8, has been received by the New South Wales Government. The process is one by whidh frozen meat is thawed in a chamber so constructed that the atmospheric pressure -can be regulated and excess moisture extracted without bursting the tissues of the meat. It is claimed that frozen beef and mutton can then be placed on the market in such a condition as to compare favorablv in appearance witih prime English meat. This demonstration was attended by representatives of the meat trade 'of Australia, Great Britain, the United States, and; South America. The beef ana mutton had been taken front s.s. Osterley, and held in n temperature of 18deg. for about three weeks. Tt was then placed in the patent chambers. Upon removal from the chambers the meat had a 'fine bloom, and was free fiom mould, whilst there was an entire absence of ''leakage." The kidneys and suet fat remained in the treated quarters, and when cut were fresh and free from bon& taint or bone stink. It is stated, s-ivs the Sydney Telegraph, that the company intend to erect at Melbourne, and later to extend operations to Sydney, and that during this year beef and mutton frozen and defrosted by the process, will be place! on the English market in bulk. :
