THE NEW THEATRE

MR. SAUNDERS' ENTERPRISE. Mr. (!. H. Saunders, of the Biograph Pictures, ha-s returned to New Plymouth after a business visit to Wellington. While there he placed an order with Messrs. Turnbul! and Jones, Ltd. (NewZealand agents) for a Westinghouse motor and generator set, with controlling switchboard complete, also a number of the latest electric fans. Messrs. John Fuller and Sons are landing a number of the latest Gaumont ErnemannTyler projecting machines on July 24. and one of these machines is booked to Mr. Saunders. He has arranged for a number of exclusive star pictures to be. screened in Whiteley Hall at frequent intervals. He has arranged with Messrs W. H. Edwards and Co.. Wellington, to completely seat the new Empire Theatre ■with tip-lip seats.

TIMELY RECIPES. ORAXUR OAKK.—Hub the rind of three or four oranges with lumps of sugir to extract some of t.lie zest. Out a dozen or more oranges in halves across, not from end to end, with a teaspoon scoop out the pulp, extract the juice, and put (he rind aside. Melt an ounce of leaf gelatine in a quarter pint of hot water, add three-quarters of a pint of orange juice, the flavored sugar, and as much more sugar as may be necessary, and bring nearly to boiling point. Have ready in a large basin three whites of eggs, strain in the hot liquid, and whisk until quite stilT. Pile in rocky heaps on a crvsta dish. SWISS ROLL. —Two teacupfuls caster sugar, two teacupfuls Hour,- two leaspoonfuls baking-powder, four eggs. "Mix the sugar. Hour and baking-powder together and break the egs into the dry ingredients, heating all for five minutes. Have ready a. Hat tin such as is used for a batter pudding, and pour the mixture in evenly, baking for eight; or ten uiimites in a sharp oven. Turn on to a sheet of sugared paper, spresud with jam quickly, and roll the cake carefully while still hot; otherwise it will crack. Serve with these "Dragon" blend, one of the best of high class teas. The teas used for this blend are extremely choice, .and mostly first pickings. It possesses great body, the'texture is One.
