SODA CRUMPETS. Two and a-lialf pounds of flour, one ounce of cream of tartar, two ounces of lanl, three-quarters of an ounce of bicarbonate of soda, two ounces of sugar, one quart of skim milk. Put the lard in a cup to melt, mix the powders well into the put the milk, which should be lukc-wann, into a large bowl, stir in the sugar, add the melted lard, and mix in the flour to make a nice smooth batter. then grease some hoops, about four and a-lialf inches in diameter, and one inch deep. 'Put them on the hot girdle, and pour a little of tlije batter in tlieiu. In a few minutes the top will bo full of holes, Lift off the hoops, and with a fisk slicer turn the crumpets over to brown, ami in a few minutes they will be done and ready for the table.
