SODA CRUMPETS. Two and a-lialf pounds of flour, one ounce of cream of tartar, two ounces of lard, tliree-quartoi'B of an ounce of bicarbonate of soda, two ounces of sugar, one quart of skim milk. Put the lard in a cup to melt, mix the powders well into the flour, put the milk, which should be luke-warm, into a large bowl, stir in the sugar, add the melted lard, and mix in the flour to make a nice smooth batter, then grease some hoops, about four and a-half inches in diameter, and one inch deep. 'Put them on the hot girdle, and pour a little of the batter in them. In a few minutes the top will be full of holes. Lift off the hoops, and with a fish slicer turn the crumpets over to brown, and in a few minutes they will be done and ready for the tabic. And if you take, our advice, you will serve "Mikado" Blend tea, the tea that is a family tea in the best sense of the word.
