Nitrogen peroxide enables the miller to transform cheaper wheats into a whiter and higher-priced article, often saving sixpence to a shilling a sack. The use of a "flour improver," often containing 60 per cent, of calcium sulphate and an appreciable amount of aTsenic, is equally undesirable. T}ie addition of powerful chemicals such as hydro-fluoric acid, phosphorus pentarohloride, and oxides and sulphides of phosphorus, is most dangerous.
