At early dawn, 6 a.m., the planter attends the muster of all the coolies on the estate; these consist of men, women, and children of eljven years of age and over, who assemble in gangs near the factory. Each gang is in charge of a cangany, who superintends the work of 'the laborers. The conductor, another official, understands the art of cultivation and looks after the various gangs. The tea-maker superintends the work inside the factory. The superintendent counts the laborers, arranges them in gangs, and sets them their work—some to plucking, others to weeding, pruning, etc., etc., after which the factory is visited, then the fields, and the work of the pluckers." The best tea estates are those at a high level, because it is much cooler there and the tea plant matures more slowly, the leaves not being so rank as in low-country tea.
