CHEESE-MAKING BOOM.
Of late years several large dairying concerns have started eheese-makin' in preference to butter-making, and more cheese is being manufactured in Taranaki this year than in any previous year. Keferring to this, Messrs R. Collett and Co, of Cardiff, in IV letter to Mien- New Zealand representative, Mr. J- U. Cruiks'hank, of New Plymouth, say:- We think it right to warn our mewls who think of increasing their cheese-making plant that they must not expect cheese-making in New Zealand to be always paying better than making butter, for the good reason that 12001 os of milk condensed into 'butter will only cost about half of the freight that the same quantity of milk condensed into cheese will; hence in the long ran it will pay tne New Zealand farmer best to make butter, and the time must come when butter will again assert its proper .position of being the best article to make in New Zealand, because of its long distance from Jinghind. The quantity of cheese, so far, coining from New Zealand is a very small factor in meeting the consumptive requirements of the Lnited Kingdom, viz., 1(1,572 tons, as against an estimated rliome supply of 140,001) tons and 110,824 tons imported, u total of 2aU,824 tons. The New Zealand contribution to this total thus represents only about 0 per cent.
