The dairy section of the Pure Food Congress at Paris, after discussion, decided that butter may contain 18 per cent, of water instead of 10 per cent, as decided at the Geneva Congrcis. lioron (an clement present in borax and boraeic acid) was recognised as a pcri missible preservative. i Other sections recommend that when jams are not made exclusively of sugar and fruit, the fact must be indicated on the label, as also must the addition of chicory to coffee.
It was decided that the transport of mineral waters in wooden barrels should not be allowed.
