The average moisture in Danish butter is 14 per cent., New South Wales 13.5, Victorian 12.0, New Zealand 11.7. The recent decision of the Victorian Government to fix 14 per cent, as the maximum percentage of in "superfine" butter will not be put into operation till next January, and may then apparently be reconsidered. As was pointed out in the Dominion some time ago, to make the grading dependent on moisture «ontent would make it, necessary for the graders to have every churning analysed. Apparently Victoria is prepared to go to this expense in order to secure a good name on the butter market. As at recent horse fairs in Hawcra, the Sydney market buyers were again in evidence, and were strong bidders for the best, class of draught horses on the opening day. If this demand for good horseflesh continues it will be a big inducement for local, horse-owners to breed from tht best stock.—Star.
