FARM AND DAIRY.
The directors of the Tarurutangi Cooperative Dairy Company have sold their season's output of butter to .Messrs. Colictt and Co. at lid per lb for September and October, lU%d for November and December, and lO'/jd for the rest of the season. .Settlers who secured section.,' in t.i; Cheviot Estate were fortunate individuals. One small holding of !)!) acres recently changed hands at a price varying from £LU to Cl 7 per neve for tile goodwill of the lease! It is claimed that one big Xew South Wales co-operative dairy company gained £15,048 in ten years by consigning | to London over what they woidd have received by selling outright. It is a common impression that thuuders'toriiis hasten the souring of milk. This was attributed to the electricity in the air accompanying the storm. Experiments by several investigators have proved that electricity does not have any effect in hastening the fermented changes of milk. The reason why milk sDiirs more c|uickly when an electrical storm is approaching is that the air temperature is usually higher then than nt any other time. This higher temperature warms the milk and creates more favorable conditions for lh ( . rapid multiplication of the germs present in the milk. It is for this reason that milk sours more quickly during or previous to a thunderstorm than at any other time.
