THE CHEESE MARKET. BRITAIN'S COLONIAL AND FOREIGN IMPORTS. That there is a falling-oil' in the cheese shipments from Canada, our only outside Cheddar rival on British marke'.s, is proved by the six months' British import figures just to hand. These show that Canada has shipped to Britain up to the end of June 30.5,089cwt, against 310,144cwt for the corresponding period of 1908 and 384,528c\vt for that of 1007. This is a decline of 13,455cwt for the first half of the Canadian season. Against this, New Zealand shows an increase of Bfi,44(lcwt, the figures for the three six-monthly periods being:—Janu-ary-June, 1907, lo0;lllewt; 1908, 229,852 cwt; 1900, 200,202cwt. Australia shipped 320»cwt of cheese to Britain in the first half of 1007, 7a3e\vt in the same period of 1008, but none this year. Of the supply from other countries, that of the United States fell away by nearly 50 per cent, on the same period--3!,Ba(>owt against 02,100cwt. The principal increase was from the Netherlands which shipped 144.970cwt from January to June, against 134.375cwt for the same period of last year. New Zealand's increase was entirely responsible for taking the imports of colonial cheese for the first part of the year from 549,749cwt of last year to fiol,9Blcwt this year: and it was almost entirely due to the Netherlands that the total from foreign countries was raised from 254,390cwt to 232,551cwt. The total increase in Britain's cheese imports was 30,303ewt. The imports for the first six months of this and'the past two years were: 1007, 8()4,472cwt; 1008. 804,139cwt; 1000, 834.532'cwt.

OUR DAIRY FACTORIES. ANNUAL LIST. The annual list" of dairy factories of New Zealand has just issued by the Government. In actual registration's up to 30th April it shows an increase of three in the number of cheese factories over last year's number, and a decrease in butter factories, private dairies, and packing houses. The figures for the two years are as follow:

Toti,ls 700 858 Since the compilation of the list, however, numerous other factories have been registered or established, and the actual figures at the present date would show an increase of about twenty cheese factories and an increase of about four or five butter factories. This net increase of butter factories, small as it is, must be considered em-ouraging in view'of the strong craze for cheese factories that has prevailed in the recent vacation, the factories, etc., are distributed as follow:

I Munis .. 1!)3 152 308 30 110 700 I The largest output of butter from one j company last season came from the New | Zealand Dairy Association of Auckland, who produced 1008 tons at Xganiawuhia (from 47a suppliers), and 852 tons at Pukekohe. The next biggest butter output was from the Taieri and Peninsula Company, namely, 430 tons at Oamaru and 1200 tons at Duncdin. The Dunedin output was at the rate of one ton for inch supplier, then' being 1200 suppliers. The output of the Xew Zealand Farmers' Dairy Union was (i 27 tons, of Eltliam 800 tons, and of Canterbury Central 8")0 tons. In cheese the big producers were T. L. .foil Co-operative 1471 tons, and Edendale and Brydpne 000 tons.
