THE ART OF MILKING. MODES THAT GET MOST CREAM. it is known that the udder of a good cow contains, before milking, about 3'/> pints of milk already formed, hut thai if milking is well carried out no less than ■£</„ t„ :je, jjullous may be secured. According to the experiments carried out by M. Lejioutre, it is also known that the method of milking exercises considerable iulliienee on the proportion of fatty matters contained in the milk. The above authority has shown that this is due to the peripheral excitation' of the nerves of secretion, which, in their turn, by redox action, bring about far greater excitation of the glandular cellules. Jf we consider the usual way of milking, which consist s in milking two udders at the same lime, we had that the effect produced is not the same for the whole period of milking. The milk from the hist two udders generally contains more fatty mutters than thatof the last two, and the richness of the milk will be enhanced if the milking be done diagonally instead of laterally. This phenomenon is at least singular, oven if it be not iucomprohon') ible, mid is explained by the fact that by milking diagonally excitation extends to all the, nerves of the glau.l. whilst, when the operation is done laterally, excitation is only produced on the sale on which one operates. In every case the inlluence of the manner of milking on the proportion of fatty matters is demonstrated by the following experiment of M. Lcpontre. The same cow was milked repeatedly by two different persons together, who changed sides with e ach milking, and' the milk coming from each side was kept distinct. One of the persons who operated merely exerted alternate pressure on the teat, whilst the other operated by longitudinal massage. The milk produced by this hitter process was far more fatty than the other, the difference being between 45 and 55 per cent. The way in which the eow is milked has therefore a great inlluence on the quality of the milk, and this influence can only bo explained by the excitation produced. The milk obtained at the 'beginning of the operation, consisting in longitudinal massage, is not as fatly as tlmt at the end of the process.
A meeting of Pahiatua dairy farmers the other day protested vigorously against the new dairy regulations, especially those, requiring f |lu payment of a fee for registration, the construction of concrete floors and races and the branding of cows. It is stated that it is over two years since a case of anthrax was reported in New Zealand. This lirst meeting of the. provisional directors of the, newly - formed T. L. J oil Co-operative Hairy Co. was held at Okaiawa on .Monday. Ten applications were received for the position of secretary; but the question of an appointment was held over to a meeting to bo held on Friday. It was announced th.it 12,000 shares had been applied for and that other applications were yet to be 'signed.— Star. The price of bran and pollard fell yesterday 20s per ton ouch.
