The Acting-Dairy Commissioner, Mr W. M. Singleton, has just returned from a visit to Taranaki and Auckland districts. From what he saw and learnt Mr Singleton is able to bear out the statements frequently made of late that the milk supply generally is declining in quantity. This is especially the case, he says, in Taranaki and Wellington districts The quality of the commercial products, however, are exhibiting an improvement, due largely to the better condition in which the milk is being delivered. Home separation, Mr Singleton found, has increased a good deal of late in the northern portions ol the Auckland province a system, rendered necessary by the nature of the country. A fairly'good butter, however, is being turned out by means of pasteurisation. The quality of the cheese being manuI factured by the older-established companies is of a fairly good standard, but some of the factories making cheese this season for the first time are turning out a good percentage of the second-grade article, due to a certain extent to the want of experience on the part of managers, and to the fact that milk for cheese-making requires to be delivered at the factory in a sounder condition than for butter, in order that an equal scoring article may be turned out. As Mr Singleton points out, good milk is required to make either good cheese or good butter, but defects in milk flavor are more fatal in connection with cheese than in connection with butter.
