DAIRYING IN TARANAKI.

IMPRESSIONS OF THE DAIRY COMMISSIONER. The outlook for dairying in Taranaki and Auckland, says Mr Cuddie, who has just returned to Wellington from a visit 11 the Northern districts, is excellent. There will be a very large increase in the cheese output of Taranaki, and while the butter output will show a decrease in consequence it will be but .-light, judging from Ihe good natural increase which is probable as a result nf tlit; condition of the stock and the satisfactory outlook generally. The manufacture of butter in the Auckland district promises to be on a greatly in- , Teased scale io that of last season. Sevi'l'il new factories will be in operation, and the established concerns anlicipat; a good natural increase. Tlie development in the cheese industry in Taranaki is, savs Mr I'mldie. proceeding on a very satisfactory basis. The Patea Freezing Company has erected special cool rooms uir cheese storage, with a capacity of 10,000 cases. It is expected SOOO eases will reach the works every fortnight. The Haweriv Dairy Company which has given up butiiter-niaking for cheese inanufncture,is erecting a central curing depot alongside the railway. The jhlea is to eonrey the green cheese daily from the niauufaeluriiig centres to the special curing -d'oiv. The same principle is being adopted by the Kaponga Company, but ibis concern lias, it is stated, adopted the progressive policy of making provision for cool-curing at its depot. Should this lie done, it will prove an object lesson to other cheese-making concerns in the district. With efficient management (his provision for a proper system of curing must result in li greatly improved quality of output. It was very gratifying to Mr Cuddie to find that several butter companies are bringing their buildings and plants up to dale, especially in the direction of putting in concrete floors and installing efficient drainage systems.—New Zealand Times.
