At present the output of cheese from tile southern factories is shipped from Patea to "Wellington, and the storage accommodation at the latter port is stated bv the Dairy Commissioner. Mr. I). The Commissioner has addressed the following circular to the cheese-making companies; •'As yon are prohably aware, it litis been customary to store large quantities of eheese from I'atca (awaiting shipment) in the ordinary wharf sheds at Wellington. This shed, which usually contains other ordinary merchandise (some of which is 110 doubt detrimental to the cheese) is quite unsuitable for the storage of dairy produce. The temperature is usually much too high in the summer mouths, with the result that the cheese greatly deteriorate in llavor, and quite a, number of cases have, come under my notice this season of cheese graded first at P:ite<i being second before leaving the colony. The length of time the cheese has been held ill this store has ranged from a few days up to live weeks. As the industry is an important one, and likely to greatly extend in the near future, 1 would recommend that this matter receive your careful consideration, and that some united ell'orts be made on the part of those interested to overcome this serious ditliculty.. Might I suggest the advisability of providing a, cool store, at a temperature of from ■lodeg to oOdcg, at Palea, be considered* Probably the cheese, could be held there until within a few days of the arrival of the fortnightly Home steamer at Wellington, instead of storing here. (Wellington). The cheese could then be shipped as expeditiously as possible, anil therefore avoid, to a great extent, the present unsatisfactory,, state of affairs, Personally, I am saiislieil thai the provision of a cool store at Patea would prove bcnciicial to the industry in any case.
