WHOLESOME MEAT.
Tile following'letter from Mr T. J. Keakts, abattoir manager, was considered at, Monday night's meeting of the New Plymouth Borough' Council: -'1 would .recommend tiie Council to make a as is done in Auckland to prevent th c butchers exposing meat outside their shops, and that all .meat lying" on the counters just inside the shops should be protected ftom the dust etc. A lot of dust and filih is blown from the roads and pavements, and some of it must lodge on the meat so exposed. This from a sanitary point is very bad, as the dust contains a great variety ol subjects, none of <ulii c h are of any benefit to the meat. The horse droppings, after being dried and bruken by passing vcluc.'es, arc easily blown about, and as a rule there are always plenty of the droppings outside the butchers' shops, due in a great measure to the men leaving their horses outside whilst they get their supply of meat for distribution. A gte.at many people expectorate about the roads and pavements. The sputum when dry releases any germs it contains. The letter was referred to the Abattoirs Committeo for a report at next meeting of tho Council.
