FARM AND 9DAIRY.
Our dairying indusctry na- made rapid s.ridcs of late years; from the olii plan ol m.-. pan, and a churn made frcm a beer barrel placed en two posts out of doors, rut far frum the fowlbouse in most cases, it ha- become s> far advanced that physical labor in connection with butter making is almost done, away with. New Icok upon the present-day mcihod of butter making as canlied out, fur instance, at the Stratford Dairy Facory. Under the management , 1 tae present general manage): (Mr J. F. the busine s of this concern has risen from an output in 190G of /soolbs per day, t'> what is expected to reach between 150 and 160 boxes, equal to nearly four tans per day. The methods of dealing witn he enormous quantity of milk which ' passes through the factory and the various creame lies is a most import- ' an: factor towards ensuring the success of tne butter. Mr Batey is one who has evidently the bump of orig.nality very largely developed, for several labor-saving appliances of his invention are to be se«n at the factory. One invenlion which is worthy of special mention is his patent scales for weighing buuer in 501b lots for boxing up for export. This appliance is very simple and very strong, and will weigh off dozens of boxes without varying as much a- half an ounce. The work is done rapidly and well. There is no need to weigh the boxes, as b>' an( ingenious arrangement by witch the scales are made 10 balance this is done away with. The scales have been in u-e for some time and have given great satisfaction. The present output s 104 boxes per day, and the company are advancing rod per lb to the suppliers. They paid £IOOO more on the last pay day (November 20) than •hey did for the cone-pending month of last year, and they expect to pay the fanners something over £50,000 'nis season altogether.
