CORRESPONDENCE.

WRAPPING MEAT. TO ME EDITOIt. Sin,—ln these days of microbes it behoves us lo bo ever on tho lookoi.t tor tho little mites. Tho other day I saw some paper in which meat lisd been wrapped by one of our local butchers, which was dated June, 1805. this, as you see, must have been knocking about New Zealand for 11 years, and who can tell where it had been during that lime ? It was yellow with age; may be it had been stored away under the couch cushion or even in a worse place than that. I have seen bundles of old periodicals and newspapers offered by children to storekeepers and butchers, (when you remove into another house you usually collect all your old newspapers into nundlcs and offer them to the 100 il butcher or storekeeper.) This is evidently what has happened when you gel your meet wrapped m part of a newspaper 11 years old and yellow with age. I think we should object to have our nuat wrapped in anything but clean white paper. Then, again", ome of our local butchers have a habit of holding their knife between their teeth whilst using both hands to lift or turn over a heavy piece of beef. I was watching one of our butchers the other day and noticed this. You will admit Mr Editor that this is a very bad habit, since one authority j tells us there are about DO different kinds of microbes in Ihe human I mouth,—l am. etc., MICBOWJ. 31st., July 1000.
