Mr Kinsella, Dairy Commissioner, in his remarks on the butter, said that as regards the keeping quality of tjie export classes which had been stored, those exhibits w'.tich showed a fairly high percentage of salt seemed to be soundest in flavour. This seemed to indicate that when butter is held over for long periods in store, the addition of a little more salt than usual is beneficial.
The New Zealand Factory Butter and Cheese Makers Association held its annual meeting to-night. . The following officers were elected: president, H. M, Boekell; vice-presidents, Brasch, J. Middleton, and W. E, Gwilliain; committee, 11, T. Somners, A. C. Ross, F, J, McDonald, 8. Bowman, VV. Dempster, A. Lees, and J. 0 Dea; auditor, Mr C. Mackie ; secretary and treasurer. J. B. Curie. A paper on home separation was read by Mr J. Tait, of Auckland, Mr Tait, whose paper met with general approval, deprecated home separation, but where it could not be helped in the back-blocks, an instructor should bo appointed to go in amongst jairymen and toach them. The instructor could be paid partly by Government, and partly by dairy companies, at the latter would benefit by the rise in the vilue of tho butter.

The National Dairy Association mot to-day and passed the following resolutions: That the Association approves of the principal of insuring the buildings, plant and machinery of its members against fire, that it be a recommendation to the dairy '* companies to insure with the Farmers Mutual i that tho Dairy Association combine to send a representative Homo to watch their interests there; that it is desirable in any proposed revision of the Custom* tariff, that there should be no inerease in the duty on dairy machinery.
