The invention luis been patented through (lie agency of Mpssrs Baldwin aiinl liay-wai-d, and consists of the injection o( a preserving licfuld into an artery, after allowing the blood to flow out, anil thus Impregnating tlio wholo circulatory system. Tha liquid consists of acetic acid and sodium chloride dissolved in sterilised water in proportions varying with the class of meat to be preserved. The amount of acetic acid used is so small that no smell is imparted to the moat . The solution may be preparul to pressrvo tho meat for a few days only or for several months.
