USEFUL INFORMATION FOR THE! KITCHEN. Roabt Goose—Half a poand of onions, one dessertspoonful of minced sage.quarter of a pound of brtadcrumbs, two teaspoon- ; fuls of salt, and half a teaspoouful of pepper. A goose should not be more than a year old. It must be well plucked, singed, drawn, wiped, and the head cut off near to the back. Cue off the pinions to the first joint, also the legs; run a skewer through the pinions, also the top of the legs. Stuff the bird as follows : Peel the onions and boil for half an hour; drain and chop them, then add sage and seasonings. Put this in the body of the bird and tie up the openioga; also tie the bottom of the legs together. Roast for one and three-quarters to two and a half hours, according to size; baste thoroughly. When done, pour off the fat from the tin, put into it one good tablespoonful of brown flour, half a pint of good stock, seasoned with salt and pepper; bell up, and serve » little round the goose, and remainder in a tureen. Also serve, this with apple sauce. Khbdive Pbabs.—Take one pound of •tewing pears, peel and core, making each hole large enough to contain a date. The dates must have first been well washed and drained. Put the pears into a jar, and add a few extra dates ; pour a wineglassful of cooking sherry over them, add a little sugar, and let them stew in a slow oven for about eight hours. Peel and slice the onion very thinly. Pat a layer of onion ia first ; thon peel and quarter the marrow, take out the seeds, and cut each piece lengthways in slices not more than half an inch thick. Bake in a moderate oven till the marrow fetls quite soft ivhen pierced with a skewer. If the top is brown enough and the marrow still hard cover it with a lid. KUR3ERY NOTES. Do not allow a baby to attempt to walk too soon, and then it will seldom suffer from weak ankles. A. baby ihould be allowed first of all to crawl about until its body and ankles besom* strong.
