USEFUL INFORMATION FOR THE KITCHEN.
The whites of potted eggs can be whisked to as stiff a froth as new-laid ones by adding a pinch of Bait to the 'whites.
Wees oookino greens and cauliflowers always put a piece of stale bread crust in the saucepan, as it will take away all the unpleasant smell. Take out with a spoon before taking up the greens.
Cocoasut Drops.—Grate a cocoanut, add an equal weight of sugar, and a very small quantity of flour ; mix with an egg. but not too stilly, and drop with a knife point into small tins. Bake in a slow oven.
SuGiß Kissss.—Whisk the whites of four eggs to a stiff broth ; stir in it halt a pound of sugar; flavour as you like. Lay it when stiff in heaps on white paper the shape and size of an egg ; put them in a hot oven.
Boiling Old Potatoes.—When boiling old potatoes, which are apt to go a very dark colour, put a tablespoonful of milk into the water in which they are boiled, and you will find they will be beautifully white whea cocked. How to Know Good Bekf.—The meat should be a deep red colour, and the fat a pure white. The finer pieces are generally veined with fat. No mark should remain when pressed with the finger, and the flesh should be quite firm. Sposge Gixokkbread Cake. —One and a half pounds of flour, five ounces of butter, six ouuctß of sugar, two teaepoonfuls (large) of baking-powder, two teaspoonfals (large) of ground ginger, one pound of syrup, and a gill of milk. Half fill the tins, and bake immediately in a slow oven about one to one and a quarter hours.
When blacking has become dry and hard mix well with a little vinegar; it will give an excellent polish (o the boots.
