USEFUL INFORMATION FOR THE KITCHEN. Scraps of Bread left over should be cat in small squares, and toasted brown in the oven and served with soups. Wben boiling rick, add a little lemonjuice to the water in which it is boiled, as this will increase the whiteness and separate the grains. Put a small piece of horseradish into each jar of pickles, and the vinegar will retain its strength longer, and the pickles will be less liable to become soft. I To Blanch Almonds Easily.—Put, them in a basin, and pour boiling water on to them. Allow them to staud for ten minutes ; then place them in cold water, when it will be found that the skins will Blip off easily if gently pressed by the finger and thumb. j Roast Joint and Brussels Sprouts a la Cbehe. —Have the joint thoroughly _ cooked, nicely browned, J)ut not burnt, and garnish it with Brussbls sprouts pre--1 pared as follows, with the thick brown gravy, served in a tureen : Trim the sprouts neatly and wash in several waters : set them to cook in plenty of boiling salted water, and, when almost done, Btrun and dry in a cloth. Melt a piece of butter in a saucepan with a little flour, add pepper, salt grated nutmeg, and a small quantity of cream or milk. Put in the Brussels sprouts, and keep them just simmering till they are perfectly tender.

A few hours afterwards he returned in order to hear the result of his speculation. An he awaited the presence of the shop--keeper he heaid a waiter call down the speaking-tabe: i *' Irish stew, one ; beef-steak pudding, \ two!" j ji "Just my luck !" murmured Jock ; " backed a blooming second !" and sadly wended his way homewards.
