USEFUL INFORMATION FOR THE KITCHKN. Milk for Invalids.—Milk pui into a stone jir, tied down, and put into an oven and baked for several hours is very nourishing for invalids and delicate children, and tastea almosl equal to cream. Rimrdy fob Bubnt Milk.—lf when boiling milk it should happen to burn, poor it at once into a jug, and stand it in a basin of cold water until it is cool, whtn it will be found to bo quite free from the barnt smtll and taste.
Cream Doughnuts.—Beat a cup of sugar and three eggs together un'il light. Mix a teaspoonful of soda with a cup of sour cream, and add to sugsr and eggs; add a teafpsonful of sal% a little grated nutmeg, or cinnamon, and fl;ur enough to make a soft dough to roll out. Gut into circles with a ringcutter, and fry in defp hot fat. Chicken-andHamPie •—Stason well some slices of boiled ham, lay them on a puff-paste about half &n inc'i thick ; then season soma pitcea of ehiek-n and pl>C3 them on the ham wi h ;1j j ydlks of some hard-boiled eggs ; cover tbese with more slices of ham, put .some gravy in, and put si puff pase on t'p. Bake welt, and eerve hot.

Then mash them with a po a'o-maaher ; lrr, with a foik, whip in one gill cf cream wr.rimd with ine ounce of bu'ter and seasoned with pepper. Tomato Sauce. —Cut up an ounce of bacon in small pic-ces and fry it; th- n add. a small piece of carrot, an onion, and a. turnip minced, and fry oil to-g-ther. Add two diced fr matces, hdi) simmer gently f r a few minutes. Diedge in one dessertspoonful cf flour, and cook again. Pour in one teacupful of stcck, and tea son with pepper and salt. Rubihegiuceihioughafine sieve, re-heat, and serva with chops or • steak.
