LARGE SHIPMENT OF CHEESE.
MR. KINSELLVS REPORT ON THB OUTPUT. PHII PBB3S ASS9OUTION. WEllington, December 4.. A large quantity of cheese from the smth wis transhipped yesterday from fclio Pap iroa. Mr. Kinsalla, Dairy Commissioner, examined tho cheese himself, and found a decided improve-, ment in a number of factory makes since last season. He found the cheese, as a whole, to be closer and firmer in body, and there was an absence of " pasty" cheose in the whole shipmentIn point of flavour, although there was a great improvement in the case of & numbor of brands (and this, he thinks, may fairly be attributed to the special pushing of tho "culture" and "starter" questions in the recent educative works) , there is room for improvement as far as other brands are concerned. In point ' of uniformity the shipment was f iirly I satisfactory, and, altogether, Dir. Kinsella confidently looks for further improvement all round as the season * advanoos. Speaking of tha Wairarapa * cheeso, Mr. Kinsella said that its quality at the beginning of the present | season was not as regular as last season, but later shipments are showing npid recovery in quality and flavour.
