TO-DAY’S RECIPE.

HONEY PUDDING. This requires 4oz honey, 6oz breadcrumbs, loz butter, loz cornflour, 2 eggs, the grated rind of half a lemon, J teaspoon of ground ginger, 1 gill of milk. Cook the cornflour in the milk for 10 minutes, then pour over the breadcrumbs, add the honey, lemon rind, ginger, warmed butter,. and the yolks of the eggs, and beat well. Whisk the whites stiffly, stir them lightly into the rest of the ingredients and turn the mixture into a wellbuttered mould. Stettin gently from 12 to 2 hours. Serve with honey saujce, made with 1 dessertspoon cornflour, 1 egg, 1 dessertspoon honey, 1 cup milk, flavouring to taste.
