TO-DAY’S RECIPE.
Lemon Pie. Make a short crust with 4oz. flour, I 2oz fat, a pinch of salt and cold water > to mix. Roll out and line a pie dish;, brushing the pastry with egg. Blend a tablespoonful of cornflour and cook it with one gill of milk. Add ths grated rind of two lemons, the one breakfastcupful sugar and the Yolks’ of three eggs. Beiat very w«ell, then pour into the lined tin and bake until the pastry is browned. Whisk the white of the eggs until stiff, pile on top of the lemon filling and sprinkle with sugar. Then put in the oven to brown.
