TO-DAY’S RECIPE.
Tomato Puree. Four pounds tomatoes, 1 .stalk celery, 2 teaspoons salt, 1 small onion, sliced, 1 bay leaf, 6 peppercorns. Cook all the ingredients until tender -and put through a strainer. Boil the pulp until it is reduced to one-halt its original volum. Seal it in hot sterilised jars. Tlhit is valuable for soups and sauces, >as well as for escalloped die hes. The tomato pulp may be bottled in the same fashion without seasonings, if preferred. i
