For times such as these the Australian Dried Vine Fruits Board has a variety of recipes. Simple, inexpensive yet attractive, tasty and filling. So when that ominous sound of a horn in the drive is heard, and the chatter of many voices, don't panic as you can

feed a multitude if you have some Australian dried fruits in the cupboard and a well stocked refrigerator or local dairy that supplies anything at a pinch. PORK-APPLE SAVOURY Two pounds pork sausages, 3 medium onions, 2 tablespoons fat, IV2 tablespoons flour, IV2 cups stock or water, salt, pepper, 1 rasher bacon, 1 apple (peeled and cored), 1 cup sultanas Brown sausages and sliced onion in fat, place in casserole. Add flour to fat, brown lightly. Stir in stock or water, continue stirring until boiling. Season with salt and pepper, pour over sausages and onion. Sprinkle with chopped bacon. Add layer of sliced apple, then sultanas. Cover and bake in moderate oven 1 hour. TULLAMARINE TOMATOES 8 largc lirm tomatoes 8 oz curd or cottage checse 4 oz Australian sultanas 2 tsp chopped spring onions V-2. tsp ginger salt 8 thin slices cucumber 1 lettuce Remove the tops from the tomatoes and remove the insides Keep two tablespoonsful juice. Mix the remaining ingredients and stuff inside tomatoes. Serve on a bed of lettuce leaves and sliced cucumber. (For picnics cover each tomato with a slice of cucumber to keep the stuffing fresh and moist). Servcs 4. PEARS DARLY 4 oz Australian sultanas 3 tablespoons bra'ndy 3 largc pears V\ pint double cream 1 oz glace chcrries, chopped 1 oz chopped nuts Place sultanas in small pan with brandy and bring slowly to boil. Teave to get cold. Pecl, corc and halve pears. Whisk cream until beginning to thicken, stir in sultanas and brandy, chcrries and nuts. Pile cream mixture on pear halves and ehill well before serving. Servcs 6.
