CREAM LAMB AND CELERY Ingredients; 8 small leg chops; 2 medium size onions; 1 stick celery; tSipn grated nutmeg or ground mace ; 2 tblspns butter ; 1 tblspn flour ; salt, pepper to taste. Water or stock. Method: Trim chops, put in saucepan. Add chopped celery, finely chopped onion. Gover with water, bring to boi'l, simmer one hour. Add seasonings. Cook until tender. Melt butter in saucepan, add flour, cook a little, add •liquid from chops, stir until thickened, adding little raore stock if sauce is too thick. Put meat in one jar, sauce in another. When ready to serve, heat remaining butter in pan, add chops, .allow to heat through. Pour over sauce and gently heat. Using this method, sauce is less likely to burn as the meat is heated first. STEAK AND KIDNEY PIE Ingredients: 11b chuck steak (topside may be used) ; 4oz ox kidneys ; little grated onion (optional) ; sea soned flour ; stock or water ; 6oz flaky pastry; chopped parsley (optional). Method: Cut meat into 2in pieces, flatten out as thin as possible. Remove core, skin from kidney ; cut into pieces. Roll a piece of kidney and little grated onion in prepared steak. Roll in well-seasoned flour Pack into pie-dish. Put a pie funnel in eentre, half-fill dish with stock or water. Roll out. pastry about lih thick and lin wider than dish. Cut off a lin strip and place round moist ened edge of dish. Brush strip over with little water, put on remaining paste. Seal well, trim edges with sharp knife. (To make a fancy edge, dint into scallops with knife handle and with sharp blade lighth slit edge of pastry.) Brush over with egg glaze. Bake in hot oven unti beginning to brown and well risen. Oover with greased paper, reduce heat to moderate, cook about to 2 hours.
CASSEROLED KNUCKLES Ingredients : Choose 2 meaty veal | knuckles, 1 tblspn each butter, plain flour, | c-up dry white wine, 1| cups stock or water, 4 thin strips tliinly pared lemon rind, 1 tblspn grated onion, 1 tspn anchovy sauce or essence, salt, pepper, if liked a little ground mace. Method : Cut knuckles through wTith saw into 3 pieces. Roll in seasoned flour; fry until lightly browned. Lift into casserole. Add any j remaining flour to pan, stir well for few minutes. Add all ingredients except wine. Simmer sauce for 5 minutes, add wine, pour over veal. Cover lightly, cook about 1 houA Serve with fluffy boiled rice. Ha'f clove garlic may be added to sauce. GOLDEN REEF STEW Ingredients : lilb stewing steak, 2 tblspns flour, 1 tblspn dripping, 21 cups hot water, 1 tblspn chopped onion, \ clove garlic, 1 tspn each sugar and salt, 1-8 tspn each pepper, paprika, all-spice, | tspn each lemon juice and Worcestershire sauce, i cup tomato juice, 1 cup tiny onions, cup sliced carrots, 1 cup cubed potatoes, | cup diced celery. Method : Trim meat and cut into chunks, dredge with flour and brown in hot fat. Add water, chopped onion, garlic, seasonings, lemon juice, Worcestershire sauce and tomato juice. Cover and cook over low heat 2 hours. Add- vegetables and cook 15 to 20 minutes longer or until meat and vegetables are tender. Serve 6.
TOMATO PIE Ingredients: -|lb shortcrust ; 2 v: 3 1 medium-size tomatoes ; 2 medium I onions, tliinly sliced; 3oz finely sliced cheese; little mixed mustard; 1 I tblspn butter ; 1 cup milk ; 2 beaten eggs ; chopped chives. Method : Line tart plate with half pastry. Melt butter in pan, add onion, fry gently until tender without browning. Peel, slice tomatoes. Put layer of tomato, sprinkle with salt, pepper, add layer of cheese. Continue until mixture is used. Beat eggs, add milk, seasoning. Pour over contents of case, sprinkle with chives, cover with remaining pastry. Slit pastry sev- 1 eral times to allow steam to escape, j glaze with little egg, bake in hot oven 10 minutes. Decrease heat to j moderate, bake 20 minutes longer. MARSHMALLOW DESSERT Ingredients : 2 cups dates ; 11b plain marshmallows ; -Jlb plain sweet biscuits ; 1 cup cream ; l tspn vanilla ; T cup drained cherries, chopped. Method : Chop dates. Roll biscuits until crumbed finely. Cut marshmallows into small pieces. Whip cream until stiff, fold in the vanilla, marshmallows, cherries, dates. Measure | cup crushed biscuit crumbs and reserve it, fold remainder into cream mixture. Shape into long roll, roll in reserved crumbs. Wrap in waxed paper. Ohill at, least overnight. Cut into slices. Serve plain or with whipped cream.
APPLE AMBER Ingredients : 4 medium c'ooking apples ; sugar ; 4oz butter ; few slices stale bread; 2 eggs (separated) ; 3 level tblspns sugar. Method : Peel, core apples ; cook in little water till soft, mash ; sweeten. Cut bread slices in halves, dip into melted butter, line bottom of a pie plate. Mix yolks with apple, put on top of bread. Bake in moderate oven \ hour. Whip whites stiffly, gradually add sugar. Remove pie from oven, inerease temperature to hot. Pile on meringue, bake 15 minutes until golden. CONTINENTAL PIE Ingredients : 6oz shortcrust pastry ; 2 tblspns oil ; 2 small opions, chopped ; 1 crushed clove garlic: 1 green pepper; 2 zucchini (baby squash) ; 1 tspn marjoram ; 1 tspn salt ; I medium eggplant ; l cup flour ; 4 tomatoes ; 1-8 tspn pepper ; 1 tblspn tomato paste (optional) ; chopped parsley. Method : In a large pan, cook onion, garlic, chopped green pepper in oil until onion is transparent. Peel, eube eggplant, dredge with flour, add to pan ; cook, stirring about six minutes. Add chopped tomatoes, sliced zucchini, marjoram, salt, pepper, tomato paste. Cover, simmer gently, stirring occasionally 30 minutes, cook uncovered about 10 minutes. Meanwhile line pie-dish with pastry, trim edges, pincli frill. Bake in hot oven 15 minutes. Pile piping ! hot vegetable into pastry case.
