Kitchen Recipes.
Sheep's Kidneys. —Cub some slices of crumb of bread, Jin thick ; trim them into pieces about 3in long and 2in wide ; cub a little of the thickness from the centre of each piece of bread on one side, fry them, and keep them hot. Take some calf’s, lamb’s, or sheep’s kidneys, skin them, and roast in a stewpan with a little butter or fat from the kidneys; when done, take them out, and put in an equal quantity of mushrooms cub in dice, shake them for a minute in the stewpan, then pun in a little water and stew tho mushrooms until done, then remove the fab ; cub the kidneys lik9 the mushrooms, put them back in the stewpan : season, add a little thick white sauce, a little piece of glaze, and one or two tablespoonsful of cream ; a little nutmeg may be added or not as liked. Till the crusts with this, heaping the centres ; smooth them over, cover with line breadcrumbs, sprinkle with oiled butter, brown the tops with a salamander, and serve. Suet Pudding. —Sift together three cupsful of Hour, two large teaspoonsful of baking powder, one teaspoonful of salt, and a little round cloves and cinnamon. Add two cupsful of finely-chopped suet, three-quarters of a cupful of syrup or molasses, two well-beaten eggs, and enough milk to make rather a stiff pudding batter. Beat it, pour into a buttered mould, steam for three hours, and serve with syrup. A Wholesome Pudding. —Heat a generous pint of milk to boiling point. Stir into the milk one tablespoonful of cornflour which has been smoothly mixed with a little cold milk, two well-beaten eggs, a tablespoonful of butter, and sugar to taste; essence of lemon is pleasant as flavouring. Let all this boil up at once, and then add one cupful of stoned stewed prunes. Pour the mixture into a buttered baking-disli, and bake for twenty minutes. Trench Pancakes.— Two eggs, 2oz of butter, 2oz of sifted sugar, 2oz of flour, half a pint of milk. Beat the eggs thoroughly, pub them into a basin with the butter, which should be beaten to a cream, stir in the sugar and flour, and when these ingredients are”well mixed add the milk; keep stirring and beating tlie mixture for a few minutes,' put it in buttered plates, and bake it in a quick oven for twenty minutes. Serve with sifted sugar. Digestive Biscuits. —Take lib of flour, ilb of sugar, slb oatmeal, of butter. Mix all together with a little hot milk and water, and roll out very thin. You may only pub half of the sugar if you wish them not too sweet.
