LEAN VERSUS FAT BACON.

At tho ovperimontal station of Wisconsin, Professor Henry lately carried out. a series of experiments in feeding pi so as to produce a larger proportion of lean meat. We may claim that the expeiimcnts show 'hat when we give our pigs a ration, rich in caibo-hydiatcH (fat forming), but lacking in protein (muscle or ilesh forming), we shall find : — 1. That there is an excessive development of fat not only on the outside of the muscles and beneath the skin, but also among the muscles. 2. That the muscles of the body fail to develop to their normal size, especially some of the "most important ones, as those along the back. 3. That an abnormally small amount of hau- and thin hkin results. 4. That while the brain, heart, and lungs do not seem to change in woight, the spleen, liver, and kidneys* aie unusually small. 5. The amount of blood in tho body is greatly reduced from the normal. 6. The strength of the bones may be reduced ono-half. The food articles at our command, whioh are rich in protein, are okim-milk, butter milk, shorts, bran, peas, green clover, and the like. No farmer can afford to manage hie farm with a minimum of these musclomaking foods ; they should be supplied abundantly and at a reasonable cost, if we only study to do so. We do not want less maize, but we want moro clover, more shorts, moro brat), more peas, more skim milk, to bring about the highest results. In view of this facts, the Mossrs Calno, Wiltshire, who are very large dealors in r-ho bacon trade, have lately been giving their customers a bonus on the lean as againet the fat kind of bacon.

The " Sydney Sunday Times," referring to the accident to Whiteside in the tirßt Anglo- Auckland match, says : " The ' long 'un,' as he is affectionately called by his fellow players and legion of friends and admirers, is undoubtedly the best half or three-quarter back amon^ colonial players, and must have been terribly missed behind the scrum on the occasion of his injury."
