Domestic Recipes.
"A. A." writes, asking for somo recipes to preserve tomatoe* now that they are so cheap. Green tomatoes may bo preserved by the methods usually adopted for preserving green fruits, in air-tigho jars. The iollowin^, which wo take from " Brett's Colonists' Uuide, 1 ' are good recipes for pickling and sauce-making : —
Tomatoks - I'ioklkd.— Prick the skins of your tomatoes ; spread thorn in layers, and on each layer pub pounded mnce, cloves, and cinnamon, and pour cold vinegar over the whole. The vinegar from tomatoes thus nremred is preferable to catsup.
Tomvto S\rt'K.— -Take 8 pounds of rips tomatoes., 1 quart vinegar, 1 pound salt, 2 ounces whole black pepper, salt«poonful of cayenne pepper, \ pound whole allspice (biuibcd), 6 large onions (cub up), 1 ounce cloves, 2 poumK brown sugar ; boil all together three houi*, stuVing frequently ; when cold, strain through a <neve fine enough to retain the seeds, and then bottle. A recipe furnished by Mr Olsen is identical with the above, except that the proportion of cayenne pepper is £ ounce, allspice } ounce, and only two onions are used. This makes a moro highly-spiced sauce.
