Points to be remembered in Dairying.
CJiiecsk has been spoiled fiom the following reasons : Hurrying cows to the shippon to be milked ; the animal heat not being taken ot of the evening milk, or in other words, milk being kept over night without cooling ; impurity in milk, arising from milking with dirty hands, cow teats or flanka being dirty, or other impurity finding its way into the cheese tub ; using dairy vessel boiler, for washing pig food, or other purposes ; press house being kept too cool ; using string to thermometer and permitting it to go into the whey ; using visp or brush to clean dairy vessels that has previously had soft soap on it ; using water to scald dairy vessels that is not actually boiling ; using water from an impure source, or stagnant water, for cleansing dairy vessels ; bad rennet ; not reducing the heat of curd after the whey is' drained off.— J.
