Make This Simple Test: of Baking Powder Purity There are so snany Baking Powders on the market to-day that the housewife is sometimes in a quandary as to which to use. The great feature that makes a baking powder valuable is its leavening capacity. An easy way to test the leavening capacity of baking powders is to place in a row as many glass tumblers as you have baking powders to test. Half fill the tumble rs with water and put one teaspoonful of baking powder in each. Then place the tumblers between yourself and the light and watch the action of each. • Stir each with a spoon, and the powder showing the largest number of tiny gas bubbles will be the one possessing the greatest leavening power.
