J. Cron'in’s'proccss is ‘by! the aid of electricity. By Way of comparison 50 gallons of milk'are treated in one hour the acid way; while by thhe new electric process 250 gallong of milk .are treated in 20 minutes, -and 35 to 50 para cent. casein saved——a remarkable difi'erence——while. the casein thus obtainable is by far} and away superior .in quality. No additional plant. is required for this new process; no technical knowledge of acids is necessary; while the method is so simple that a child can operate it. Defatted milk treated with acids for the purpose -of casein m»a.nufactnrc ‘is not only injured by thus losing much of its value as a food for human "con-sumption——-but it also prevents-' many outlets of casein for manufacturing‘ purpose owing to the acidity of its structure. \Vhil'e by the electrical process ‘all the nutritious elements -are sa.vecl'.. Valuable albumin (now such. an important item of commerce) is} easily obtainable, and the casein is absolutely‘ free from foreign substances. ’ '
