LEMON SNOW.
Soak for half an hour loss of powdered gelatine in a pint of cold water (two breakfastcupfuls), and then put it into a saucepan with three-quarters of a pOuiid of sugar and the rind and juice of two lemons. Simmer slowly at the side of the fire, and stir until the gelatine is melted. Strain and put to one side to cool, and allow the mixture to remain there until H just begins to cool. At this stage the whites of three eggs, stiffly beaten.are wMsked into the mixture, and the whisking is continued until the sweet stiffens and has the appearance of snow. It is then piled roughly into a crystal dish. , ;
