Il is vexing when a jelly or shape of some dainty description breaks on being turned out of the mould > Here is one hint that should not be forgotten; Never move a dish or a mould while it is cooling. Remove it to a safe spot while it is liquid, and let it remain. When set, do not shake it violently; the best method is to dip the mould into hot water —as hot as the hands can bear —for not more than half a minute. If the mould is of tin. If of China or earthenware ,two minutes will not be too long, and while it is in the water carefully press the edge of the jelly away from the sides of the mould, in order to loosen it.
