PRACTISING ECONOMICS.
One early result of the war h that there is less waste in the well-directed kitchen than was the. case a few months ago. Even the haughtiest of cooks has a personal interest in the position with relatives of her own at the front ,and is not superciliously contemptuous of the cold meat as of yore. In the more ordinary kitchen there is a recognition that a carefully-prepared soup is a useful addition to the luncheon menu, as well as that of dinner, and that bones, trimmings, and the cuttings of vegetables can be turned to account this way. Fewer courses are served everywhere, the reduction being chiefly marked as regards the entree, the joint, and the game. ,
