TINNED FOODS ADDRESS TO CIVIC LEAGUE The prevalent idea that food kept in an open tin can acquire injurious properties was exploded last evening by Dr. E. B. Gunson. in addressing members of the Civic League. This idea, said the doctor, is a fable, like the souring of milk by a thunderstorm. It was necessary, on the other hand, to be as careful in the matter of cleanliness and refrigeration as with fresh or cooked food, as the contents of a tin might easily become contaminated or infected after opening. The process of canning did not interfere seriously with most vitamins, and the widespread belief that tinned foods had lost their dietary essentials was, generally speaking, without foundation. Tho common method of preserving canned goods was in tin, and poisoning from tin did not occur.
