Scots Hall En Fete BRIGHT DECORATIONS Bright-hued flags and pennants decorated Scots Hall last evening for the eighth annual ball held by the Shipping Officers’ Guild of New Zealand. SAUTE KIDNEYS IN CASES Ingredients: 3 or more sheep's kidneys. l&oz of margarine or butter. ljoz of utter. 1 gill of brown sauce. 1 teaspoonful of chopped parsley. Salt and pepper. 1 small piece of onion. Thin slices of bread. A little ketchup or Worcester sauce Method: Skin and core the kidneys and slice them very thinly. Sprinkle them with salt and pepper. Chop the oniott finely. Melt the but ter in a small pan. put in the onion and fry a golden brown. Next add the kidneys and cook gently for about five minutes, then put in the flour, stir it over the fire and add the sauces. When it boils, draw the pan to the side of the stove and let it simmer gently for five minutes, fhe slices of bread must fit some small ramekin cases, fry them a golden brown, put one at the bottom of each case, fill up with the kidney mixture Sprinkle a few browned crumbs and chopped parsley on each and serve as hot as possible. CASSEROLE OF FISH - This dish cooks itself, is solid, tasty and no strain on the digestion Splendid for children and most economical Allow 21b any white fish for four people. Put 2oz butter or margarine in stew-pan or casserole. Add two s}iced onions, four sliced carrots, and four tomatoes. Pepper and salt. Pack in fish in convenient pieces. Cov sr with sliced potatoes. Dab with mar garine. Put on lid. Cook for about one hour removing lid a few minutes before serving to brown potatoes.
