TOFFEE CUSHIONS
1 A WHOLESOME SWEET FOR CHILDREN Put one pouncl of granulated sugar into a saucepan with one teacupful of water; set the pan over the fire, but do not let the contents boil until all the sugar has melted and you have a syrup. Stir very gently while the sugar is dissolving. Add two teaspoonsful of glucose, and boil the mixture until a little hardens when dropped into cold water. Flavour with a few drops of vanilla essence, stir, and pour the toffee on to a buttered tin. When it is cool enough to handle, cut it into bars, roll each one quickly with the hand on a board, cut it into pieces to form "cushions” using slightly oiled scissors for the purpose, and leave the sweets to harden. If the rest of the toffee shows signs of getting hard while you are cutting up a bar, stand the tin on a warm stove —hut watch it carefully lest the mixture boils again.
