A SEASONABLE RECIPE
SAVOURY LOBSTER Required: One medium-sized lobster, fine ounce of butter, one tablespoonful i °C cream, salt and pepper, half a teaspoonful of chopped parsley. Carefully pick out all the meat from the shell of the lobster and chop it v ery finely. Melt the butter in 9 small saucepan an< * stir in the lobster, cream! salt and Pepper to taste. Make this mixture Wash the shell of the lobster a Qd cut it in half lengthways, and then f ut again across. Put the mixture jnto the pieces of shell. Arrange the nead-pieces standing up. and the two Pieces of tail at the bottom. Shake ov ®r the chopped parsley. Serve either hot or cold.
