POTATOES—THE OLD WAY
Sir, — I was interested in your article yesterday, drawing attention to the present potato glut, and supplying recipes to encourage the greater consumption of potatoes. Perhaps your readers would like to learn of a good old Scottish and Irish way of feasting royally on this food. Bake a number of small and flawless potatoes in their jackets, place them in a bowl and seat yourself in front of them. Peel each hot potato with your fingers, dip it into fresh creamy milk, touch it on a salt pile and—pop it in. This sounds too simple to be true, but it’s the way potatoes taste best. Try it once and you will feel, as I do, that, given time and a loosened belt, you could put an end to the present potato glut unaided. FIRTH OF LORNE.
