BEEF STEAK AND OYSTER PUDDING *~iUT the steak into very thin ij | slices, about tu;o inches wide :: | and three inches long; dip ::: | each piece into a seasoning of | flour, salt and pepper; put an ' 1 oyster in each piece and roll it ' lup; pack the little rolls into a :: pudding basin lined with good suet orust, with a few shreds of bacon and chopped parsley. When the f: basin is full pour in enough brown stock or water to come nearly up to the top; wet the edges and cover with the top crust, pressing the edges well together. Tie in a pudding cloth and place in boiling water. Soil from three to four hours according to size of pud- : ding. Mushrooms may be used insteed of oysters if desired. Mrs D. F. ( Linwcod ).
