A DIFFERENT WAY WITH PLAICE
BAKED IN BATTER Make a batter with a quarter of a pound of flour, one egg, one and ahalf gills of milk, and half a gill of water. Leave it to stand for at least an hour. Have one medium-sized plaice filletted for you by your fishmonger; wash, and dry these fillets, roll them up, and season to taste with salt and pepper. Put one and a-lialf ounces of butter into a pie-dish to melt. Arrange the fish in the dish, and pour over the batter. Put it into a fairly hot oven and bake for about three-quarters of an hour, taking care to lessen the beat if and as required. When cooked, the fish can be either turned out or served in the dish. If cheese sauce is served with it. it emphasises the “difference.” To make
! the sauce, stir two or three ounces ; of grated cheese into half a pint of ordinary thick white sauce; season well; when the cheese is melted, the ! sauce is ready.
