VEGETABLE PIE

Soak two dessertspoonsful of tapioca or sago. The best vegetables to use are peas, beans, tomatoes, and carrots. Fill a dish up with layers of vegetables, alternating with layers of tapioca or sago, and sprinkle each layer with salt and pepper. When the dish is full, add a layer of cut potatoes and a few pieces of butter. Fill the dish with water and cover with pastry. Cook slowly for an hour or just over.
